EASY TO CREATE SIMPLE COCONUT DESSERTS

Coconut can absolutely be a part of a healthy diet. It’s gotten a lot of hype in recent years, as a super-healthy food. Coconut also is a remarkably important part of Indian cuisine.

Here are some basic yet, delicious sweets which are easy to make. Vegan, gluten- free desserts that are healthy for body as well as mind.

COCONUT CHOCOLATE BALLS

This sweet requires no cooking or baking, and is super easy to make. One of the best and most popular desserts.

INGREDIENTS

  • Desiccated coconut   1 cup.
  • A can of sweetened condensed milk.
  • Melted semi sweet chocolate.
  •  Dry fruits cut into small pieces 1/4 cup.
  • Almond powder (optional) 1 cup.

HOW TO MAKE

– Mix all the ingredients together in a bowl.

– If the mixture becomes sticky, just put it into the freezer for 45 mins.

– Once the mix is chilled, shape into small bite sized balls (about 1 heaping tablespoon of mixture each) and roll these bite sized guilty pleasures over desiccated coconut.

Store them in an air tight container once prepared. These coconut chocolate balls, can be kept refrigerated, and are also freezer friendly.

COCONUT RICE PUDDING / RICE KHEER / FIRNI

It is a rich and creamy dessert dish, that is made with rice along with milk or water, as well as a sweetener like granulated sugar.

INGREDIENTS

  • Rice flour (easily available in market) or normal rice.
  • Milk.
  • Shredded coconut  1 cup.
  • cinnamon powder 1 tea spoon.
  • A can of sweetened condensed milk or any other sweetener of your choice.
  •  Dry fruits cut into small pieces 1/4 cup.

HOW TO MAKE

Heat milk. Add milk, cinnamon powder and bring to a boil.

Add rice. Mix and then add condensed milk or sugar or jaggery, reduce heat.

Cook. Stir often and cook until mixture is thickened to a “yogurt-like” consistency. Now add shredded coconut to the mixture.

Chill. Let it cool at room temperature.

Cool in fridge. Chill in fridge, preferably overnight, allowing it to thicken further.

– Sprinkle some more cinnamon powder.

Garnish with toasted shredded coconut at the end on top and dig in!

COCONUT PEANUT BUTTER BALLS

If you are a peanut butter fan, you’ll love this peanut butter based dessert. These are also known as energy balls, as they provide you with energy for a longer period of time.

This dessert is also super easy to make.

INGREDIENTS

  • Desiccated coconut 1 cup.
  • Peanut butter as per requirement.
  • Sweetener of your choice. Like honey or jaggery. In case peanut butter is sweet enough, you don’t need to add any sweetener.
  • Dry fruits cut into small pieces 1/4 cup
  • Almond powder. Optional. 1 cup

HOW TO MAKE

  • Mix all the ingredients together in a bowl.
  • Mix it well until doughy consistency.  Mixture should not be too flowy.
  • Make it doughy enough to make it into ball shapes. Taste the mixture before you roll it into balls. Add sweetener or any other ingredient if required.
  • Freeze the dough for about 20 minutes, to make the mixture firmer and less sticky. Optional.
  • Once the mixture is prepared, roll into balls and coat them with desiccated coconut nicely.
  • Store them into an air tight container.
